Malaysian Recipes - Peanut Satay Sauce

This is the most common accompaniment to Chicken Satay - try it and see if you agree that it enhances the flavour of the Satay !!!

Main Ingredients Other Ingredients
  • 6 dried chillies (soaked in water)
  • 1 shallot
  • 1 stalk lemon grass (cut into half and use the lower half)
  • 20 grams galangal
  • The above ingredients are to be pounded using pestle and mortar or blended until it becomes a paste.
  • 1 cup of cooking oil
  • 250 grams raw peanuts
  • Fry raw peanuts and crushed coarsely preferably using pestle and mortar and set aside.

  • 10 grams tamarind paste
  • 1 cup coconut milk
  • 5 grams palm sugar
  • 5 grams salt
  • 50 mls cooking oil
  • Method
  • Heat oil in a pan and fry pounded ingredients until fragrant.
  • Add coconut milk, tamarind paste, sugar and salt and stir gently.
  • When the coconut milk comes to the boil add the pounded groundnuts and leave to boil on a low heat.
  • Remove from heat and place in a bowl or pour it on the satay.
