Malaysian Recipes - Chicken Satay

This is probably the best-known and best-loved Malaysian recipe.
In Malaysia it is enjoyed on all sorts of occasions like birthday celebrations, business events and family outings.
Don't forget the Peanut Sauce ;-0)

Main Ingredients Seasoning Ingredients
  • 600 grams chicken fillets - this will be enough for 4 people, allowing 150 grams per person.
  • 20 – 25 barbeque bamboo skewer sticks
  • 1 crushed stalk of lemon grass to brush the satay.

  • 20 grams tamarind paste
  • 5 grams sugar
  • About 15 grams salt to suit your taste
  • Slice these spice paste ingredients and blend together with the oil until fine.
  • 100 grams shallots
  • 3 cloves garlic
  • 2 stalks lemon grass (cut into half and use the lower half)
  • 15 grams ginger
  • 15 grams galangal
  • 60 mls cooking oil
  • 15 grams turmeric powder (optional if you like a yellower color)
  • Method
    Mix the following spices, then grill for 2 minutes and put in a grinder and grind until fine :-
  • 5 grams coriander seeds
  • 5 grams cumin seeds
  • 5 grams fennel seeds


  • Wash the chicken fillets and slice into strips or cubes, as you prefer.
  • Combine blended paste and ground spices with the chicken and add tamarind paste, sugar and salt and leave to marinate for 12 hours or overnight.
  • Pierce the chicken onto each skewer.
  • Grill over a charcoal fire or use a grill pan, constantly brushing with crushed lemongrass dipped in oil.
  • Eat either as it is or with satay sauce if you prefer.
